Gingerbread Granola (Vegan, Soy Free, Refined Sugar Free)


I know it is January, but I had to share this recipe with you, because it is so yummy!

The gingerbread spices make this different from other granola.


Ingredients

- 3 cups (300 gram) rolled oats (GF if desired)

- 1 cup (80 gram) pecans and walnuts

- 1/4 cup peanut butter

- 2 tablespoons maple syrup

- 2 tablespoons pumpkin seeds

- 2 tablespoons sunflower seeds

- 2 teaspoons gingerbread spices

- Pinch of salt


Method

- Pre-heat the oven to 180 degrees (350F).

- Put all the ingredients in a bowl and mix it until it is combined.

- Put the granola in a baking tray.

- Put the granola in the oven for 10 minutes (keep an eye on it).

- Then take the granola out of the oven and mix it together.

- Put the granola back in the oven for 10 minutes (keep an eye on it)

- Remove the granola from the oven when it is ready and let it cool.
